What is lavender?
Lavender is a green shrub in the light-flowered family with narrow silvery leaves. The flowers are characterised by blue, purple and even white or pink colours depending on the species and variety of the plant. There are more than 40 species of this shrub. Lavender is mainly found in Mediterranean countries, but is also cultivated in many European countries and North America. As an ornamental plant, it is also quite commonly used in Polish gardens or on balconies.
Role of lavender in our body
Lavender has many medicinal properties that can benefit the functioning of our body. The use of lavender helps with digestive disorders, lack of appetite, flatulence and abdominal pain. The essential oils contained in lavender flowers have a soothing effect on the human nervous system. As a result, lavender calms, soothes nerves, relieves stress and nervous tension and makes it easier to fall asleep. People who have problems with insomnia and are anxious and nervous can put a handful of dried lavender flowers in a cloth bag and hide it under their pillow. The gentle aroma of lavender will help them relax faster and fall into a healthy, restorative sleep.

Applications of lavender in the kitchen
Most of the uses of lavender are related to cosmetic and health applications, while it also has many, somewhat less well-known uses in gastronomy. It may come as a surprise to some people to learn that lavender is one of the herbs that go into the blend known as herbs de Provence. Dried lavender is a spice that blends perfectly with rosemary, oregano, marjoram and savory. Meat rubbed with dried lavender before roasting will acquire a delicate, interesting aftertaste. It is floral, with a delicate lemony note in the background.
