Fenugreek is characterised by a slightly bitter and aromatic taste, which to some resembles a mixture of lovage and burnt sugar. Roasted, it loses its bitterness and starts to resemble nuts in taste. As we mentioned earlier, fenugreek is an important ingredient in curry mixes, but this is not the end of its uses. It can also be found in spice blends such as Bengali panch poron, Yemeni salatah or Ethiopian berbere. Ground fenugreek is great for preparing oriental and Indian vegetable dishes, especially legumes. In North Africa and India, fenugreek has also found its way into bakeries as an interesting addition to breads.
