It is worth knowing that cinnamon (in various varieties) is the only spice in the world which is extracted from the bark of the plant which, after preliminary processing, is dried in the sun and sold either as a powder or in so-called cinnamon sticks. Although in European cuisine we associate cinnamon with sweets, in Indian and Middle Eastern cuisine it is commonly used in salty and spicy dishes.
